For as long as I can remember, I’ve been utterly fascinated by pastry. There’s something truly magical about the intricate art of creating stunning desserts, combined with the fascinating science that makes every recipe work (or sometimes, not work!).
My early baking attempts, I’ll admit, were often more about enthusiasm than success. I recall trying my hand at countless cakes and cookies in my younger years, often met with less-than-perfect results. It was during lockdown that I truly slowed down, practiced more diligently, and gradually saw my skills begin to blossom. This period of quiet dedication ignited a deeper passion, leading me to a pivotal career change shortly after – I embarked on the challenging and incredibly rewarding journey of becoming a pastry chef at a leading 5 star hotel, golf & spa resort. This transition wasn’t just about learning to bake; it was about truly understanding the “how” and “why” behind every ingredient and technique, allowing me to build my knowledge on recipe development from the ground up.
My personal journey of baking failures, followed by newfound understanding, is precisely why “Everything Pastry” exists. I realised that my early struggles stemmed from a lack of foundational knowledge – the “know-how” of how recipes genuinely function.
